Southern Buttermilk Biscuits

Serves 8 to 10 (each)

Ingredients:

2 cups bread flour

2 teaspoons baking powder

¼ teaspoon baking soda

½ teaspoon salt

4 tablespoon european unsalted butter, cubed, frozen

3 tablespoon chilled shortening

¾ cup buttermilk

Directions:

Preheat oven to 375F. Line baking sheet with parchment paper

In a large mixing bowl sift flour, baking powder, baking soda, and salt.

Using a fork or pastry cutter, cut butter & shortening into flour. (DO NOT USE HANDS)

Stir buttermilk into flour, mix with wooden spoon or spatula (don’t worry if it’s a little sticky)

Turn the dough out onto a floured surface and roll into a rough rectangle, about an inch thick. Fold it half of the dough over (letter style) and gently press dough down with rolling pin and slightly roll. Repeat process one more time.

Gently roll out the dough once more, so it forms a rectangle. Then fold dough in half, but do not roll again.

Cut dough into biscuits using a biscuit cutter or circular glass/cup. (DO NOT TWIST CUTTER WHEN CUTTING)

If you have scraps just reform a rectangle and cut additional biscuits.

Place biscuits on a baking sheet and place in the oven. Bake until golden brown, about 8 to 12 minutes.

Brush top with melted butter
